Aimee Fortney’s Lucky Peas

1 Tablespoon olive oil
1 Tablespoon butter
2 red bell peppers, diced
1/2 cup diced green onions, diced
2 cans black eyed peas, drained, rinsed and drained again
1 Tablespoon hot sauce (I used Papi Joe's Tennessee Pepper Sauce)
1/2 teaspoon sea salt (or kosher salt)
1/4 cup reduced sodium chicken broth

 

Lucky dish! Saute red bell pepper and green onions in 1 Tablespoon olive oil and 1 Tablespoon butter. Add drained black eyed peas and cook over medium heat for about 10-15 minutes. Serve as a side dish or with chips. If desired; add chopped collard greens, kale or spinach to this dish, and saute with the red bell pepper. Happy New Year! (If needed, add the chicken broth to thin out, and if you need to add more, add more!)
